Gobhi Paratha / Cauliflower Flatbread

Hiii everybody !!
Hope you are all doing great! .. It has been pretty hectic for the past few weeks and finally it’s time for an other yum Indian recipe – Gobhi Paratha or Cauliflower Flatbread. For all the non-Indians out there, if you are familiar with Indian flatbreads and spices and of course cauliflower 😛 , then this dish is no rocket science!
Once you get the hang of stuffing and rolling it out, this recipe is super easy and very tasty and nutritious !!!This is the end result :

  • All you need :

For the Paratha dough –

Wheat flour – 1 Cup

Water – 1/2 Cup (More or less as required)

Salt – Per taste

Oil – 1 Teaspoon

For the stuffing –

Cauliflower – 2 Cups (Grated/ Minced)

Red chilli powder – 1/2 Teaspoon

Coriander powder – 1 Teaspoon

Cumin powder – 1/2 Teaspoon

Dry mango powder – 1/4 Teaspoon (Aamchoor powder)

Turmeric powder – 1/4 Teaspoon

Salt – Per taste

Cumin seeds – 1/2 Teaspoon

Cilantro and/or Mint leaves – Few (Roughly chopped)

  • Serves : 2 (Makes about 4 or 5 parathas)
  • Time to prepare : 45 minutes (in total)
  • Let’s get started :

1> Let’s prepare the dough first. Get started with mixing the wheat flour, salt, oil and water and keep mixing very well with hands until you form a thick pasty dough like shown below.

Cover it and keep it aside with a little oil sprayed on top, for at least 10-15 minutes.

2> Meanwhile, let’s prepare the stuffing. With the help of a grater or a shredder, grate the cauliflower florets into tiny pieces. To this, add all the spice powders mentioned above (Red chilli, Coriander, Cumin, Turmeric, Dry mango powders and cumin seeds, salt) as per taste and mix well. Also add chopped cilantro/mint leaves and keep aside.

3> After letting the dough rest for about 10-15 minutes, mix it again well with hands and make it into equal balls (about 4 or 5). Press the balls with your hands a little and flatten them as shown.

4> Roll the flattened dough balls with the help of a rolling pin on a flat surface. Once you rolled it into your desired shape, fill it in with the cauliflower stuffing made before.

Now, gather the ends of it together and twist it to secure our stuffing.

Now, roll this back again, but this time very gently so you don’t tear the stuffing apart. Make it back into the same shape as before. To ease with the rolling process, dust the parathas with little wheat flour on both sides.

5> On a medium heated pan, place this Paratha and cook it until you start seeing tiny bubbles on each side. Do not cook it on a high heat, as you might not be able to cook the stuffing properly.

Phew ! I know those were a lot of pictures, but I was just trying to explain it easily ! Hope you all feel the same way and please excuse my Paratha shapes, hey I am learning too 🙂

That’s it !!! We are all done !

Now, serve it hot with a dollop of ghee or butter on the Parathas and with a side of Yogurt or pickle or both 😉

  • Tips / Variations : 

> Similarly, one can make Aloo Paratha (with boiled, mashed Potatoes) or different other vegetables, just experiment !

> Spices are all per taste. Use as much or as little as required.

> To ease with the rolling process, dust with little wheat flour on both sides before rolling.

> While cooking the paratha on the pan, you can add few drops of oil or ghee for more taste
