It’s the holiday season and I hope you all are enjoying it to the fullest !!! .. My husband and I had a yummy, very filling meal the other day, and I wanted to share it with you all 🙂 ..
Alrighty, here’s today’s recipe’s highlight pic :
All you need :
Baby Potatoes – 8-10
Cumin seeds – 1 Tablespoon + 1/2 Teaspoon
Coriander seeds – 1 Tablespoon
Red chilli powder – 1/2 Teaspoon
Mango powder (Aamchoor) – 1/2 Teaspoon
Curry leaves – Few
Salt – Per taste
Oil – 1-2 Tablespoons
Serves : 2
Time to prepare : 45 Minutes in total
Let’s get started :
1> Clean and pressure cook the baby potatoes (pierced by fork couple of times) in salt water until two whistles or boil them until soft, yet not mushy. Peel and keep aside.
2> In a pan (without oil), dry roast a tablespoon each of Cumin and Coriander seeds and coarsely grind them together once cooled down.
3> In a wide pan, heat up 1-2 Tablespoons of oil and shallow fry the boiled and peeled baby potatoes until golden brown on all sides.
4> Now in the same pan, add in 1/2 Teaspoon of Cumin seeds and after they sizzle, add in Curry leaves, coarse ground Cumin+Coriander, Red chilli powder, Mango powder and Salt. Mix all the spices with the baby potatoes and fry for about 5 minutes tossing them around.
That’s it !! We are all done 🙂
This is such a simple yet flavorful side dish that goes well with Rice or Roti or anything you fancy !
I’ve served it with steaming Tomato Rasam and Rice on our rainy evening dinner !! 🙂
Tips / Variations :
> Piercing the potatoes with fork a couple of times before boiling would help the salt and other flavors to be absorbed very easily.
> You can vary the amounts of Oil and Spices according to your taste.
