Black bean and Corn dip

Heyy all !!!

I am soo excited today to present you with a very, very easy and delicious recipe of a light evening meal or a perfect snack – a mexican inspired dip recipe (again!) .. you can easily say I love mexican 🙂 .. especially dips and chips!!

I came across the idea of this recipe online when I was searching for dips when I had bell peppers, corn and black beans at home (and was not in the mood to make something exhausting). An awesome replacement for the spices was from the ladies at ‘showmethecurry’ who used taco seasoning .. so I stole that idea from them 😉

Now let’s get into how it turns out to be, so you can decide for yourself if you want to go ahead check out the recipe 🙂

All you need: 

Black beans – 15 oz Can (or 2 Cups)

Corn – 15 oz Can (or 2 Cups)

Bell pepper – 1 Cup (finely chopped)

Onion – 1 Cup (finely chopped)

Tomato – 1 Cup (finely chopped)

Jalapeños – 2 (finely minced) or to tate

Taco Seasoning – 2 Tablespoons or to taste

Salt – To taste

Lime juice – 1 Tablespoon

Cilantro – few sprigs (chopped)

Serves: 4

Time to prepare: 10 Minutes

Let’s get started: 

1> Drain and rinse well the canned beans and corn. Omit this if you are using fresh ones.

2> Finely chop rest of the ingredients (Bell peppers, Tomatoes, Onions, Jalapeños) and keep aside.

3> Now mix all the ingredients mentioned above along with taco seasoning, salt, lime juice and cilantro into a bigger bowl and that’s it!!!

We are literally done (in like 5 minutes!)

This is a perfect idea for a quick get together food and the best part about this is, you can prepare it and keep it (marinate) in the refrigerator for an hour or two to let all the flavors soak in!!!

Yummm with a perfect crunch!

Tips / Variations:

> Can use fresh, frozen or canned corn depending on individual’s preferences.

> Marinating the mixture and even refrigerating it for a while adds more flavor and taste.

> This is an awesome make-ahead food idea for friends and family get-togethers or even for a picnic outside!
