Mint rice

Hey friends!

How is it going?

Have you ever wondered what to make when all you had was a bunch of mint at home?! .. Well, you can make a full meal with fresh mint and some basic indian cooking ingredients .. Mint rice, Mint Pulao, Green rice however you wanna call it, you gotta taste it to believe it πŸ˜‰

I make this all the time and it’s perfect for lunch boxes or for dinner..

And I must mention, the pictures do not do good justice to the taste. One has to taste it to enjoy the deliciousness, trust me! πŸ™‚


All you need:

Mint leaves – 1 bunch (fresh)

Onion – 1 (sliced)

Green chillies – few (per taste)

Ginger – 2 inch piece

Coriander leaves – few sprigs

Coconut – 2 Tablespoons (fresh or frozen)

Cumin seeds – 1 teaspoon

Cashews – few (broken)

Cloves – 2

Cinnamon – 2 inch piece

Oil – 2 teaspoons

Salt – per taste

Rice – Cook 1 and half cups of rice and keep aside

Serves:Β 2 (as a meal)

Time to prepare:Β 40 minutes (including cooking rice time)

Let’s get started:

1> Cook the rice in a rice cooker (or you can use left over rice!). While that’s going on, slice up the onions and let’s grind up the mint leaves, green chillies, coconut, coriander leaves, ginger and little water (about a couple of spoons) until its a smooth paste.


2> Now in a wide pan, heat up the oil, add in the cumin seeds, cloves, cinnamon and cashews and fry for a couple of minutes. Don’t let the cashews turn golden/brown yet. Now add the onion slices and salt and fry until onion slices change their color.

3> Next add in the grind mint paste and mix well and let it fry for a couple of minutes until the raw smell goes away.


4> Now put in the cooked rice and mix very well .. and that’s it! We are all done πŸ™‚


As I have told you earlier, this is not one of those dishes that looks yummiliciously tempting to eye, but you gotta taste it to trust me .. that’s all I can say πŸ™‚



Tips / Variations:

> A perfect idea to use leftover rice on those rush-hour mornings for packing into lunch boxes!
