Beetroot Crisps

Helloo friends,

It’s been a while and feels good to be back .. I have an interesting recipe today. To be really honest, this was sort of an experiement. The other day, when I came back home after an evening walk, I got an idea to make something different out of what I bought that previous morning – beetroots. Now, normally I would make beetroot halwa (a dessert) anytime I buy these, but this time I thought why not make a snack out of these – and a spicy one at that 😉 .. Put a few things together, mixed and fried and the result is a yummy crispy snack. Hope you check it out and give it a try!

  • All you need:

Beetroots – 2, small (grated/shredded) – 2 packed Cups

Onion – 1, medium (finely chopped)

Green chillies – Per taste (finely chopped)

Coriander leaves – Few sprigs (roughly chopped)

Mint leaves – Few (roughly chopped)

Curry leaves – 1 or 2 sprigs (roughly chopped)

Gram flour / Chickpea flour – 1 Cup

Rice flour – 1/2 Cup

Salt – Per taste

Oil – To fry

  • Serves: 4 (makes about 15 crisps)
  • Time to prepare: 30 minutes
  • Let’s get started:

1> Grate/shred the washed and peeled beets and mix in all the chopped items(onions, green chillies, coriander leaves, mint leaves, curry leaves). On the side, heat up oil required to fry on medium heat.

2> Now add in the chickpea and rice flours, salt and mix well until it forms kind of a thick dough-like consistency. (It shouldn’t be runny as you should be able to make patties out of it by hand).

3> With the help of something like a ziploc bag, make pattie like shapes by placing a little ball of the dough on it. Once the desired shape is obtained, slowly and carefully slide the pattie from the ziploc into the hot oil with your hand.

4> Fry the patties for about 2 minutes on one side and turn around and repeat. Take them out onto a paper napkin and they are ready to serve!

  • Tips / Variations:

> Taste best when they are hot and crispy.

> Serve with ketchup and some onions on the side ~ Mouth-watering 🙂

> Good use of a healthy vegetable. I am sure kids will love it!
