Mango Custard – Quick and Easy!

A very big hello to everyone!!! Thank you all for your patience, and to those of you who are still viewing and commenting on my recipes.. It means a lot to me and I am back! After exactly 1 year!!! πŸ™‚

Things have been going good and blissful.. and I promise and hope I am going to keep up with my passion – HappieBelle.

Since it is spring and the beginning of yummy Mango season, I thought I’d start off with something very delicious that involves mangoes, and something that is super duper easy to make. One can make it in less than 10 minutes.

The other day when I went to a lunch buffet along with my family, I was so in love with the dessert which was Mango Custard. I did some research on how to make it a super easy way and here its the one I experimented and loved:

Helloo dear friends!!

First off, very sorry about the long hiatus; just been a little busy in life. I promise I am going to take time to one of my passions, HappieBelle no matter how busy I am πŸ™‚ .. Friends back again?!! .. Thank you!!

Now, here’s me wishing all the readers a very happy and prosperous Diwali!! πŸ™‚

So going with the current occasion, I have for you all, a traditional sweet recipe from India which is very popular and made specially during the festival of Diwali – Besan Laddu / Besan Sweet.

Thanks to my little sister, for the inspiration πŸ˜‰

It is a super easy, fool proof recipe and also since it doesn’t take too much time to make, unlike other traditional sweets from India, I feel one can’t go wrong here πŸ™‚

Beetroot Crisps

Helloo friends,

It’s been a while and feels good to be back .. I have an interesting recipe today. To be really honest, this was sort of an experiement. The other day, when I came back home after an evening walk, I got an idea to make something different out of what I bought that previous morning – beetroots. Now, normally I would make beetroot halwa (a dessert) anytime I buy these, but this time I thought why not make a snack out of these – and a spicy one at that πŸ˜‰ .. Put a few things together, mixed and fried and the result is a yummy crispy snack. Hope you check it out and give it a try!

Mint rice

Hey friends!

How is it going?

Have you ever wondered what to make when all you had was a bunch of mint at home?! .. Well, you can make a full meal with fresh mint and some basic indian cooking ingredients .. Mint rice, Mint Pulao, Green rice however you wanna call it, you gotta taste it to believe it πŸ˜‰

I make this all the time and it’s perfect for lunch boxes or for dinner..

And I must mention, the pictures do not do good justice to the taste. One has to taste it to enjoy the deliciousness, trust me! πŸ™‚

Heyy everyone!!

First off, I wish you all a very happy and safe Diwali !!! πŸ™‚

I know this is one of everyone’s favorite festivals, mainly because it’s the festival of lovely lights and of course, because of the yummy food we make this season of the year !

Hope you are all doingΒ great! .. It has been pretty hectic for the past few weeks and finally it’s time for an other yum Indian recipe – Gobhi Paratha or Cauliflower Flatbread. Pav Bhaji – Bhaji

Hello All !

Today I have one of ‘the most’ delicious fast foods from the streets of Mumbai, India !

This post has been sitting in my drafts for a while now and since it has started raining / drizzling in some of the places, I thought I would post this recipe, as this is ‘the perfect’ one for those kind of days ! πŸ™‚

Pav Bhaji is such a mouth watering dish, I am sure anyone who has tasted it would agree with me !!

I miss the street foods back in India a lot .. and this made me try a few of those dishes at home with whatever stuff available here in the US .. Surprisingly when I made the Bhaji for the Pav the first time (I mixed recipes from Vahrehvah.com and Sailusfood.com and my own variation) and it came out very well and so my recipe had to make it to HappieBelle, for all of you and of course for myself for future reference πŸ˜› .. So, here we go !
